Editorial: Food Safety Issues Head the News
The European Food Safety Authority (EFSA) has published its report on food-borne disease outbreaks in the EU during 2007. It finds Salmonella still top of its list, causing the most recorded incidents of food poisoning. Another pathogenic bacterium associated with poultry products, Campylobacter, was the third most common cause of this type of illness.
The role of arsenic in causing human ill health is also under the spotlight, with a second court case in the US in which it is alleged that a patient developed leukaemia following exposure to poultry litter when an arsenical medication was incorporated in the feed. In Israel, it is alleged that excessive arsenic residues were found in locally produced chickens between 2003 and 2006.
Finally, food safety is also apparently at the centre of three major trade issues: the Chinese have called for the US to resume safety testing of its cooked chicken products with the view to their export to the US; the Russians continue to widen the ban on imported poultry products from countries affected by H1N1 or low-pathogenic bird flu; and the European Parliament has stopped its reevaluation of chlorine as an antimicrobial treatment in processing plants, thus effectively ending any hope of lifting the ban on imports of US poultry meat for the foreseeable future.

Agricultural Research Service researchers have developed technology to protect pasteurised liquid eggs from food safety threats, including Salmonella enteritidis.
