International Egg and Poultry Review

Israel’s poultry sector accounts for about 19 percent of the country’s total agricultural output. Israel’s world ranking is 8 th in turkey production, 11th in geese production and 35th in chicken meat production. Broilers account for 61 percent of Israel’s total poultry production, including breeder broilers. Turkey represents 18 percent and eggs accounted for about 20 percent.

In 2005 Israel produced 335,000 MT of chicken meat valued at $390.8 million, 125,316 MT of turkey meat valued at $137.0 million and 90,700 MT of hen eggs valued at $90.7 million. Israel’s ranking of agricultural commodities in 2005 by value: chicken meat ranked first, turkey meat fourth, and hen eggs seventh in Israel. About 80 percent of Israel’s poultry consumption comprises fresh meat.


Israel has the world’s largest per capita consumption of turkey meat and fourth largest per capita consumption of chicken meat. In 2004, daily per capita consumption of turkey total 46.34 grams and chicken totaled 153.09 grams. Hen egg consumption is 30.98, ranking 36th in world per capita consumption. According to a recent report, Israeli poultry annual per capita consumption has grown to more than 36 kg.

The Israeli government banned the practice of force-feeding geese to produce foie gras. The ban went into effect in March 2006. Israel had been one of the world’s major producers of foie gras. In 2004, local goose liver production totaled 460 MT valued at about $40 million with exports totaling 240 MT valued at $27 million.
