The Mathisons have been producing geese for the Christmas market since the 1970s and are now developing the seasonal autumn demand for geese and also a round-the-year sales of free range ducks at Southfield Farm, Leven, near Beverley.

The duck sales have been expanded by introducing portion-controlled products and now goose livers, goose fat and smoked breasts are also sold under the ‘Yorkshire ducks and geese’ brand to pubs, restaurants and other caterers.

They produce up to 2,000 geese for Christmas, and will this year be using the new processing and cutting plant. They pride themselves on producing birds on a completely natural, high-welfare system and on the rigorous standards in processing to ensure top quality products.

Visitors to the farm will see how Stuart Mathison and his brother, Malcolm, fit the goose production into a mixed farming system which also includes rearing capons in traditional style on harvest stubble.
