Research has revealed that takings jumped by 8.6 per cent last year.

The increase has put an extra £3.5million into traditional butcher shops as people turn to specialist and higher value cuts.

Spearheading the boost is a fresh interest in lamb, which has seen sales grow by 26 per cent, according to the research by Quality Meat Scotland.

By contrast, butchers in England seem to be struggling, with the market taking a dip.
