European Commission approves a new French geographical indication

The European Commission has approved the inclusion of 'Poulet du Bourbonnais', from France, to the register of protected designations of origin (PDO), according to a government-issued press release.

Bourbonnais chicken is a cross between a Bourbonnais-bred cockerel and either a Bourbonnais-bred hen or a recessive hen that allows the cockerel phenotype to be expressed in the resulting products.

After cooking, the "Poulet du Bourbonnais" has marbled red muscles and pale white muscles, with the presence of subcutaneous fat. It has an intense, persistent smell. Its flavour is intense and persistent, with the specificity of poultry stock. Its flavours are well-balanced, with no excess acidity or bitterness.
